Iron, tobacco, truffles, leather, raisins, dried herbs (thyme, rosemary). The pronounced minerality at the beginning gives an almost salty impression. Vinification
A fifth of the grapes were left uncrushed, with spontaneous fermentation and no added selected yeasts, followed by 30 to 45 days of maceration in large 50-hectoliter oak vats. The wine aged for 24 months in 30-hectoliter oak barrels. After racking and selection, it underwent an additional 27 months of aging in 25-hectoliter wooden barrels. Unfiltered.
