Blanc de Blancs pairs excellently with fresh seafood dishes, such as oysters or ceviche, creamy cheeses like Brie, delicate dishes like sole meunière or sushi, and light desserts such as lemon tart, thanks to its fresh acidity, citrus notes, and elegant minerality.
Vinification
Whole-cluster pressing and fraction separation. For Blanc de Blancs, only the first pressing – coeur de cuvée – is used. Clarification through natural settling, controlled cold fermentation, brief aging of the base wine on lees in stainless steel tanks, 100% malolactic fermentation, and no filtration. Secondary fermentation occurs in the bottle, with at least 36 months of bottle aging before disgorging.
