Vinification
A blend of macerated white wines made from organically grown Sauvignon and Yellow Muscat grapes, hand-harvested on October 5, 2019. After spontaneous fermentation, it was aged for 28 months on fine lees, half in a wooden acacia barrel and half in used barrique barrels.

Altum
