After pressing, the grapes ferment in new and used barrels made of Slovenian and French oak. Fermentation occurs spontaneously with natural yeasts. After undergoing malolactic fermentation, the wine matures for several months on lees. It is bottled without filtration.

The vineyards of Sanctum Winery stretch across the steep southern slopes of the hills above Loče, a region rich in viticultural history, where Carthusian monks cultivated vines as early as the 12th century.
